One of the best pleasures of living in Maui is the freshest fruits and vegetables possible! Right behind our apartment we have not only the beautiful clear ocean but a Farmers Market. They have everything and anything you could want. On Monday, Wed, and Fridays they do an open market outside. You can sample new items they have and enjoy the fruits of Maui's trees and try veggies from their farms.
Today at the market I bought everything I would need to cook. Usually I buy a ton to cook for the week but I feel to distracted that way. I cannot cook everything in one day like some people (props to you) but I have the time to cook everynight so why not? I'll be starting the gym next week where Josiah, my boyfriend, is the fitness manager at. Working out with him as my "personal trainer" will be interesting. For the first time, I am serious about this training program. Plus he follows me home at night and eats and sleeps with me. I can't get rid of him! He's like Chris Powell on Extreme Weight Loss when he moves in with his clients. Well, he is my Chris Powell and for that I am grateful.
Today for lunch I am keeping it simple. While I eat lunch I currently have a whole chicken in the crockpot. I will make veggies and mushrooms with it along with pumpkin soup. YUM! I will have the recipes for my dinner post.
Here is my lunch for today. Nothing fancy or decorated like fancy photography but just whole foods. Here is some mashed sweet yams, green beans, chicken thighs and a honey bananna!
